Tonight's dinner was a variation on Ma Po Tofu, using ground turkey instead of pork.|
1. Ground turkey is better tasting than ground pork in Ma Po Tofu.
2. Combining "Lee Kum Kee" brand Ma Po Tofu Sauce with a little fresh Szechwan peppercorn ("sansho") and fresh garlic, in my hands, probably violates the Geneva convention on torture and biological weapons.
2a. It's so good, I can't stop eating it despite the pain, but it's as close to the best fresh Ma Po Tofu as I've ever had.
3. When people think Tofu, they think vegetarian, but this ingredient in a meat dish like this really makes it shine.
